White Crusty Loaf

Ingredients - Stage 1 Dry
2100g Strong White Flour
45g Yeast
50g Salt
50g Castor Sugar

Ingredients - Stage 2 Wet
1200g Water - tepid (not hot and not cold!)
120g Olive Oil


Method
Put all dry ingredients in large bowl
Add wet ingredients into this bowl
Work with your hands for 10 minutes
Leave in bowl to prove/raise until doubles in size
Take it out and kneed again
Split in 1/2
Roll out into pizza/ciabatta shape
Leave to prove for another 10 minutes

Add on to a baking tray with parchment paper
Put in preheated oven @ 190 degrees
