The Strand Cahore Tomato Salsa

8 Large Tomatoes - skinned and de-seeded
4-5 Miniature Green Chillis
1-2 Shallots
1.5 cups Chopped parsley leaves
1 Bunch Fresh Coriander
1 Large Lime
Maldon Salt & Cracked Pepper to season

Method:
Firstly place your tomatoes in boiling water for up to 4 minutes so that skin peels off easily
(place in cold water immediatley so that you can handle them)
While tomatoes are in water, finely chop parsley, coridander & chillies (desseed chillies!)
When you have successfully peeled your tomatoes, cut in half and desseed
Chop the tomatoes finely and add all ingredients to a bowl
Squeeze in the juice of the entire lime
Bring all ingredients together gently in a bowl and season with maldon salt & cracked pepper

We serve this salsa with our Meadowfield Boile Cheese Bon Bons
This salsa is also gorgeous with Nachos!
