Pea & Mint Purée

1 (900 g) package frozen peas, thawed in microwave about 5 minutes (or fresh, cooked peas)
6 sprigs fresh mint, leaves and softer stems only
340 g plain crème fraiche
2 cloves garlic, peeled, roughly chopped
1 tsp salt
1 tsp unseasoned rice vinegar

Throw all of the ingredients into a food processor and whizz until smooth. Done!
