Panko Onion Rings

Ingredients (multipy by amount required)

1 Large Onion cut into large rings
155g Plain flour
1 tsp Baking powder
1 tsp Salt
1 egg
235ml Milk
80g Panko Breadcrumbs
Oil for frying

Heat oil in a deep pan
Separate onions in to rings and set aside
In a small bowl mix together - flour, baking powder and salt
Dip the onion slices into the flour mix until they are entirely coated and set aside

In a separate bowl whish together the eggs and milk and then mix the flour mixture into this wet mix with a fork

Dip the flour coated onion rings into this new 'batter' mix until entirely coated
Place on a wire rack to drain until they stop dripping

In a shallow steel gastro tray, spread out the panko bread crumbs
Place each batter covered onion ring into the panko bread crumbs and cover them entirely by scooping the crumbs over them
Give them a hard tap as you take them out to remove any loose crumbs but the crumbs should stick very well to the batter

Deep fry the onion rings a few at a time (so they don't stick together) for 2-3 minutes or until golden brown
Remove and set on kitchen roll to drain
Season with Salt/Pepper
