Leek & Potato Soup

Ingredients

3 Leek stalks
1kg Peeled potatoes
1lb Kerrygold
3 ltrs Homemade Vegetable stock

This is a very simple recipe!

Roughly chop all leek stalks and clean any mud or dirt from them
Melt 1lb butter in a large pot
Add sliced leeks to the pot and sauté until soft
Add roughly chopped, peeled potatoes
Add 2-3 ltrs (cover the top of the veg) of vegetable stock
Simmer until all vegetables are soft
Blend with a hand blender
Season with maldon salt and cracked black pepper
