Fruit Scones

450g Self Raising Flour
2 tsp Baking Powder
75g Castor Sugar
1 pinch Salt
85g Unsalted Butter
120mls Cold Milk
2 Eggs
40g Raisins

Pre-heat the oven to 200º
Line a baking tray with grease proof paper
Sive flour, baking powder, sugar, salt and cubbed butter in a mixing bowl
Rub butter into the dry mix with your hands until it resembles bread crumbs
In a separate bowl whisk together your eggs and milk
Now bring together your wet and dry ingredients and be careful not to overwork
Once you have a nice dough formed, add in your raisins and work them together
Pop your dough on to a floured surface and roll out to 1-2" thickness and cut our your scone shape
Brush with egg wash
Place in the oven for 25-30 minutes or until golden brown
