Dark Chocolate Fondant

Stage 1

50g Melted Butter for brushing
Cocoa Powder for dusting
200g Dark Chocolate
200g unsalted butter
200g Castor Sugar
4 Eggs
4 Egg Yolks
200g Plain Flour

Stage 2

First - get your moulds ready - butter and dust with cocoa
Place prepped moulds in fridge to 'set'
Next place well over a pot of simmering water
Slowly melt chocolageand butter together
Remove the bowl from the heat and stir until smooth
Leave to cool for approx 10 minutes
In a separate bowl, whisk 4 eggs and 4 egg yolks with caster sugar
Sift plain flour into the eggs and then beat together
Pour melted chocolate into egg mix slowly in thirds beating between
You should finish up with what looks like a loose cake batter
Heat oven to 200c
Place fondants on a baking tray and cook for up to 11 minutes
Tip onto a prepped plate and place a scoop of ice cream on top

*Cook for up to 15 minutes if from frozen
