Creamy Leek Sauce

3 tblsp Unsalted Butter
3 Medium leeks
1/3 cup Dry White Wine
1/3 cup Heavy Cream
3 tblsp Finely chopped chives
400ml Maldon Salt and Pepper
1/4 cup Homemade chicken stock


Melt butter in a medium pan over a low heat
Add leeks and simmer, stirring occassionally for 5 minutes
Add wine and simmer until leeks are very tender for approx 4 minutes
Add cream and 2 tblsps chives
Return to simmer
Season with salt and pepper
Reserve HALF and put the other half in a blender and add chicken broth
Blend until smooth
Add the two mixtures together to create a creamy leek sauce
