Christmas Mince Pies

Stage 1
255g Plain Flour
Pinch of salt
140g Unsalted Butter in cubes
6 tbsp Cold Water

Stage 2
Sieve flour and salt into a bowl
Rub the butter cubes gently into the flour mixutur until it resembles fine breadcrumbs
Add cold water to the flour mixture using a knife.
Use your hands to bring the mixture together but do not over handle
Roll the pastry to a flat 2mm deppth
Use a large cookie cutter to cut circles out of the pastry
Get your foil cases ready on flat baking trays or in bun trays
Place the circles in to each foil case
Put 1 soup/dessert spoon of 'mincemeat' filling in to each
Now use your Star cookie cutter to cut start shapes in the pastry
Put 1 start shape on top of each mince pie
Brush the top of the mince pie with egg yolk
Put in the oven for approximately 20 minutes or until golden brown at 200 degrees

Stage 3
Once the mince pies are cooked and cooled, dust the top with icing sugar
Servce warm with Brandy Cream!
