Brioche & Butter Pudding

Stage 1

15g unsalted butter plus extra for greasing
1 packet Tesco Brioche Rolls cut in half
3 eggs beaten
2 tablespoons Castor Sugar
300ml Milk
50ml Cream
2 teaspoon Cinnamon plus extra for dusting
50g Raisins

Stage 2

Preheat oven to 180c
Butter Pyrex rectangular dish
Mix together the eggs, milk, cream, castor sugar and cinnamon
Cut brioche rolls in half and butter
Arrange the half slices butter side up slightly overlapping
Scatter the raisins evenly
Pour the liquid mix evenly over all of the assembled brioche rolls
Bake in the oven for 15-20 minutes or until golden
Serve heated with warm custard
