Ballymaloe PIZZA SAUCE

Stage 1

2 Onion
2 Garlic Cloves
1 Carrot
2 Celery Sticks
1 tblsp Olive Oil
800g/14oz Tin Tomatoes

Roughly chop all vegetables and mix together
Heat olive oil in a pot, adding the vegetables to sweat
Add Salt and Freshly ground pepper
Keep lid on pot and cook until soft
Add tomatoes and simmer for 30 minutes on a low heat
Liquidise with a hand blender
Check for seasoning and add where necessary
Add a teaspoon of sugar if you feel the tomatoes are too bitter
