Autumn Carrot & Sweet Potato Soup

Ingredients

4 Sweet Potatoes
6 Large Carrots
1 Large Spanish Onion
2 Granny Smith Apples
1 Dessert Sp Curry Powder
Vegetable Stock
Kerrygold Butter

Method
Finely chop onion and sweat in a large pot with Kerry Golf Butter
Peel and chop carrots, apple and sweet potatoes and add to pot
Mix curry powder (see curry powder ingredients recipe) and vegetable stock in boiling water
Pour stock and curry mix in to pot
Boil until all veg is soft

Mix through a nutri bullet to give a lovely soft puréed finish
Serve with a dollop of cream and toasted pumkin seeds
