Apple & Celeriac Soup

Ingredients
2 Onions diced
2 tbl sp Olive Oil
6 Apples, peeled and cored
2 Celeriac peeled and cut in to cubs
2 tsp Thyme
1/4 tsp Salt
6 cups Homemade Vegetable stock
2 Cups Cream

Garnish
Roughly chopped walnuts
Thyme
Drizzle olive oil

Method
Heat olive oil in large pot on a medium heat - add in oinion and cook until soft
Add in cubed apple, celeriac, thyme, salt and veg stoc and simmer until celeriac is soft
Blend with hand blender
Slowly add cream and remaining vegetable stock
Garnish and serve!
